Roasted Sweet Potato

When you talk about the health benefits of sweet potatoes, the problem is "Where do you begin?" Just know that sweet potatoes are loaded with antioxidants, anti-inflammatory nutrients, blood sugar-regulating nutrients and vitamin A.

Alright, we now know that sweet potatoes are good for you. Now let's find a way to cook them so simply, yet so deliciously, they become an everyday food and not a special treat eaten only during the Thanksgiving Holiday.

The recipe I wish to share with you is not a recipe at all. It is more of a technique.

Wash each sweet potato well and cut off the ends. Cut the sweet potato in half length-wise. (watch out for your fingers)

Line a sheetpan with a "Silpat", or just use a piece of aluminum foil. ("Silpat" can be found in the cooking tools section of this blog) Spray just enough non-stick oil spray on the "Silpat" or aluminum foil to cover it lightly.

Place the sweet potatoes on the sprayed "Silpat" or aluminum foil and bake in a preheated 375 degree oven for 40 minutes, or until soft when lightly squeezed.
